REPLACE(text, from, to) swaps every occurrence of a text for another. LENGTH(text) counts characters. Both work like their Excel namesakes (SUBSTITUTE and LEN).

For every product, show slug (the name with every space replaced by an underscore) and name_length (the number of characters in the name). Order by product_id.
